Sushi is the most famous Japanese dish outside of Japan, and one of the most popular ones in Japan. It is a mix of rice, raw fish and vegetables. Depending on its ingredients and the way it is cooked, we can distinguish several types of sushi:
Maki. Maki means roll. it is what everybody knows as sushi. It consists of a roll of rice with a piece of fish, vegetables of fruit in the middle and surrounded by a black and dry seaweed called nori. There is a thicker type of sushi known as futomaki.
Uramaki. Uramaki sushi has the rice on the outer layer while the ingredients are in the middle of the roll surrounded by a piece of nori. It is usually seasoned with sesame seeds and roes. The most famous uramaki is California roll.
Temaki. Temaki or hand rolled sushi, is a bigger type of sushi whose main ingredient is nori. It is large cone-shaped piece of nori on the outside and filled with rice, fish, seafood and different vegetables.
Nigiri. It is the most popular sushi in Japan. This is a large ball of rice with a piece of fish, seafood or another ingredient on the top. This type of sushi does not include nori. Sometimes it is used to hold the ingredients together.
Sashimi. It is one of the most famous dishes in the Japanese cuisine. It´s not considered as sushi because it does not include rice. Sashimi is just a raw piece of fish.
